Quinoa oatmeal breakfast bowl

Hello everyone! 

As we say goodbye to Summer and hello to Fall I find myself craving the comforting foods that Fall brings with it. Oatmeal is one of my favourite things about the upcoming season. It's such a comforting dish that always seems to warm me up on cold Autumnal days! I'm very conscious about what I put in my body so I always try to eat the healthiest meal I can or make a dish as healthy as I can. Which leads me to this post, Quinoa oatmeal. I've replaced the oatmeal with quinoa to make a classic autumnal dish into a superfood breakfast, sure to give you the energy you need to kickstart your day. This dish will definitely be one of my go to breakfasts this Fall. 


Ingredients; 


  • 2 bananas (mashed) 
  • 3 tsp Cinnamon 
  • 1 cup Quinoa (rinsed) 
  • 1/2 cup Coconut milk
  • 1 tin of Coconut cream *if you struggle to find coconut cream soy milk can be used as a substitute, substitute 1/2 cup*
  • 2 tsp Vanilla extract 
  • A handful of Strawberries
  • A handful of Blueberries

Method; 


  • Add your quinoa to a pan of boiling water, allow to boil for 2-3 minutes before turning down and allowing to simmer for a further 10-12 minutes. Once cooked set aside.
  • Add the mashed banana to a bowl, add 2 tsp of cinnamon and mix. Add this mixture, coconut milk and coconut cream to a pan. Boil for 5 minutes before reducing to a simmer. 
  • Add the cooked quinoa to the milk mixture and continue to simmer for 15 minutes or until the mixture looks thick and creamy. Remember to keep stirring at regular intervals. 
  • 5 minutes before the end of cooking add your vanilla extract and 1 tsp of cinnamon powder. Stir into the mixture and continue to cook. 
  • Serve, add your strawberries and blueberries, a sprinkle of cinnamon and enjoy!

I hope you all enjoy this recipe! This recipe can be made the night before and kept in the fridge for the following morning, all you have to do is heat it up in a pan and add a few drops of milk.
